Nick Holloway is the chef and co-owner of Nu Nu Restaurant, The Rising Sun Bar & Bistro, and Numi Ice Cream and Pantry in Palm Cove, Tropical North Queensland.
Since opening its doors in 2004, Nu Nu Restaurant quickly gained the attention of the national media for its exciting food, unrivalled customer service and delightful tropical beachfront setting.
Leading an enthusiastic and energetic team of young chefs, Nick only works with people who are passionate about showcasing the best produce the region has to offer in fresh and inventive ways.
Nick’s introduction to kitchen life was a humble one. While studying for an Engineering degree at Melbourne University, Nick took a job washing dishes to earn money to pay for his studies. It was here that Nick quickly realised he enjoyed the lively energy of the hospitality world.
After seeing Geoff Lindsay speak at the chef’s symposium, Nick became inspired to use cooking as his creative outlet and applied to cook at Stella where he would start his apprenticeship. He was then fortunate to get the opportunity to work at Blake’s, under Andrew Blake, before returning to where it all began with Geoff to open Pearl Restaurant in Richmond. Nick remained at Pearl for four years before getting the urge to make a significant sea change. This was when he purchased a one-way ticket to Cairns and the Nu Nu story began in 2004.
Cooking at a variety of events ranging in number from 100 to 1000 guests, Nick’s profile has seen him travel around the world from New Zealand to Dubai.
Due to Nick’s exceptional and globally recognised talents, he has featured as a guest presenter at many high-profile events including the Noosa Food and Wine Festival, Delectable Queensland, Brisbane Masterclass and The Melbourne Food and Wine Festival – to name but a few. He captivates audiences with his culinary passion, innovative dishes, and engaging stories. You may even recognise his as a guest chef from his recent appearance on Channel 10’s 2015 series of MasterChef
, where he competed in an immunity challenge.
Nu Nu Restaurant has won numerous awards over the years including “Best Breakfast” in Queensland, “Regional Restaurant of the Year” nationwide, and “Restaurant of the Year” for Queensland.
Nick is dedicated to preparing food that is a reflection of the vibrant, colourful, and dramatic landscape that is Tropical North Queensland.
